  • ¼ cup finely chopped shallot
  • ¼ cup dry white wine

Instructions

  1. Season & Sear Chicken
    • Sprinkle chicken cutlets with a pinch of salt and pepper.
    • Heat the sun-dried tomato oil in a medium skillet over medium heat.
    • Add chicken and cook for about 6 minutes, turning once, until golden and the internal temperature reaches 165°F (74°C).
    • Transfer to a plate and keep warm.
  2. Make the Sauce
    • Add sun-dried tomatoes and shallots to the pan. Sauté for 1 minute until fragrant.
    • Increase heat to high and add white wine, scraping up browned bits.
    • Cook until wine reduces by half, about 2 minutes.
  3. Add Cream & Finish
    • Reduce heat to medium. Stir in cream, any chicken juices, and the remaining salt and pepper.
    • Simmer for 2 minutes until slightly thickened.
    • Return the chicken to the pan and coat with sauce.
  4. Serve
    • Plate the chicken, top with the sun-dried tomato cream sauce, and garnish with chopped parsley.
