These Pesto Mozzarella & Tomato Stuffed Chicken Breasts are high in protein, balanced with fresh vegetables, and ideal for anyone focusing on healthy nutrition and long-term weight management.

This recipe combines the rich taste of basil pesto with juicy tomatoes, fresh spinach, and melted mozzarella — all baked inside tender chicken breasts. It’s a wholesome Mediterranean-inspired meal that proves a diet in Malta doesn’t have to be boring.

Ingredients

  • 4 chicken breasts
  • 8 tablespoons pesto (choose fresh or homemade for best nutrition)
  • 8 slices of tomato
  • 1 cup grated mozzarella cheese (part-skim for a slimming option)
  • ½ cup fresh spinach
  • 2 tablespoons extra virgin olive oil
  • Salt and black pepper to taste

Instructions

  1. Preheat Oven – Set oven to 400°F (200°C).
  2. Prepare Chicken – Slice chicken breasts horizontally, being careful not to cut all the way through. Open up to form a pocket.
  3. Stuff with Nutrition-Rich Ingredients – Spread 2 tablespoons of pesto inside each breast. Add 2 slices of tomato, ¼ cup mozzarella, and a few spinach leaves.
  4. Season & Drizzle – Sprinkle with salt, pepper, and drizzle lightly with olive oil.
  5. Sear the Chicken – Heat 1 tablespoon olive oil in an ovenproof skillet over medium-high heat. Sear chicken for 2–3 minutes on each side until golden.
  6. Bake Until Done – Transfer skillet to the oven and bake for about 8 minutes, or until chicken is fully cooked.
